Once softened, season with salt, pepper and nutmeg. Then, cut the baby tomatoes in halves and place them on top of the spinach leaves in the large bowl. Egg white, spinach, roasted peppers oats all in a bowl. Remove from heat, season with salt and nutmeg and allow to cool. Blend 1/4 cup of water and 1 cup spinach until spinach is in liquid form.
